For Patron Chef Matt Manning, it was discovering the exceptional cooking of Toulousian classics like cassoulet - a bean and duck confit melt-in-your-mouth kind of stew; rustic Toulouse sausages and croquant; a savoury dessert made from almonds and caramelised sugar.
Toulouse is a destination that has coloured Matt’s gastronomic journey with more than just nostalgia. It is where he experienced an exceptional bistro, which inspired his vision for restaurant Grub & Vine.
