Jam packed with colour, spicy scents, untouched beaches and tropical heat, this tiny island packs a punch well above its size. Shaped by its colourful historical and cultural past, as well as its proximity to India, Sri Lanka is the inspiration behind this month's How To Cook.
Sri Lankan food evokes memories of cuisine rich in flavour, delicately spiced delicious curries that bring together families and friends. This month Chef Matt Manning rekindles a menu inspired his Sri Lankan adventures trawling rustic markets for ultimate Island style must-eats; curd and treacle, a dessert made using buffalo milk curd and dusted with coconut; hoppers, which are like a battered pancake, cradling everything from eggs and veggies to sweet treats; and of course, Sri Lankan curries, seafood and King coconuts.
